Sustainability Story
What is Climate Neutrality
A state in which human activities result in no net effect on the climate system. Requires balancing of residual greenhouse gas emissions with reductions or removals. All Climate Neutral Certified brands must meet climate neutrality standards for measuring, offsetting, and reducing greenhouse gas emissions from making and delivering products and services.
This certification covers business activities and operations for the following brands :
Jikoni achieved Climate Neutral Certification as part of 's certification process. 's measurement, offsetting and reduction plans fully account for Jikoni's 2021 emissions
01 Measure
Jikoni measured Scope 1, 2 and 3 cradle-to-customer emissions following categories and approaches established in the Climate Neutral standards.
GHG Protocol Scope 1
Emissions from energy used in buildings, fleets, and equipment.
2 tCO2e
GHG Protocol Scope 2
Emissions from electricity.
0 tCO2e
GHG Protocol Scope 3
Emissions from raw materials, manufacturing, shipping, air travel, and other activities in the supply chain.
57 tCO2e
Total Carbon Emissions
The sum of Scope 1, 2, and 3 emissions.
59 tCO2e
02 Offset
Jikoni invested in projects outside of their value chain to compensate for all of their measured carbon emissions. This step supports their climate neutrality designation, and enables Jikoni to take responsibility for historical emissions that can’t be reduced.
Total Investment in Carbon Credits
$1,056.70
Jikoni's credits came from:
Avoided Deforestation ?
Avoided Deforestation
Projects that reduce the risk of deforestation in important forest ecosystems.
Wind ?
Wind
Projects that support wind energy generation in order to reduce dependence on fossil fuels.
Industrial ?
Industrial
Project that capture or remove emissions from industrial processes.
Reforestation ?
Reforestation
Projects that restore degraded or deforested ecosystems.
Offset equivalency
For reference, reducing a footprint by 1000 tonnes is roughly equal to removing 230 passenger vehicles from the road for a year.

03 Reduce
Jikoni has set targets and identified actions to reduce their emissions from operations and their supply chain. These actions will enable Jikoni to emit fewer emissions in the future.
Mid Term Targets
Jikoni has committed to reducing emissions by .
This target is aligned with global trajectories to limit climate warming to 1.5 degrees Celsius.

This target is aligned with global trajectories to limit climate warming to 1.5 degrees Celsius.
Reduction Actions
Jikoni is implementing a Reduction Action Plan to reduce emissions from within its own operations and supply chain.
Current Year Reduction Actions
01
What We’re Reducing
We plan to reduce emissions from our purchased goods and services.
How We'll Reduce It
We plan to increase local/bio-dynamic/organic farm purchases within 200 miles of our site by 5% (currently 1.77% in 2021) by building more partnerships with these farms.
02
What We’re Reducing
We plan to reduce our waste ratio to turnover (kg/£ revenue).
How We'll Reduce It
We plan to reduce our waste to turnover ratio from 1.87 to 1.5 by returning containers and packaging materials back to our suppliers, reducing the use of plastic packaging, buying in bulk, and engineering our menu to include produce at local farms.

What We’re Reducing
We plan to restructure our sourcing of produce with local and sustainable suppliers.
How We'll Reduce It
We will be starting an amazing partnership with a local biodynamic farm, Waltham Place (1hr from the restaurant, directly from the soil to our kitchen!) and another local farm for seasonal produce.

What We’re Reducing
We will be doing a full review this year to reduce our waste output significantly. Our partner is First Mile, who are building an electric waste collection fleet, have great recycling procedures and are Zero-to-landfill.
How We'll Reduce It
Step 1 would be to increase our recycled waste percentage and step 2 would be to reduce our waste output as a percentage of our annual turn-over.

What We’re Reducing
We are buying clean, green electricity and gas.
How We'll Reduce It
We are working with Ecotricity, who supply us with green electricity which is generated by wind and solar energy and carbon neutral gas.
